Brussels for Breakfast?
When we think of Fall veggies, it seems natural to hyper-focus on pumpkin and other gourds…but there’s another vegetable that thrives this time of year and packs a nutritional punch…
You guessed it…
It’s Brussels sprouts!
Consuming brussels sprouts may help protect against cancers of the stomach, lungs, kidney, breast, bladder, and prostate.
Crunchy veggies like Brussels sprouts may also help you stave off other health issues, such as high blood pressure, high cholesterol, heart disease, and diabetes. Combining them with a high protein food, like eggs, is a fabulous way to jumpstart your metabolism and begin the day.

This delicious and Fall-inspired recipe for Brussels Sprouts Hash is another fun way to infuse brussels sprouts into your diet this fall.
Recipe:
Ingredients:
Two eggs
¼ of a shallot
Half of a pear
2 cups of shredded brussels sprouts
1 tbsp of olive oil
Salt
Pepper
Seasoning, to taste
Dice the shallot and pear, and shred the Brussels sprouts.
Heat the olive oil in a cast iron skillet over medium heat.
Add the shallots, cook for a few minutes, then add the Brussels sprouts and pears. Cook until tender.
Make wells with the back of a spoon in the hash. Crack eggs into the wells.
Turn on the broiler to high, and transfer the skillet to the center rack of the oven.
Cook for 1 to 3 minutes, or until the eggs are cooked to your liking. Season to taste, and enjoy!
